This product was purchased for use in a meal-on-Wheels kitchen, where the manipulation of food, but not only kept warm until shipped for delivery. The shell is built sturdy and does his job well, but the stainless steel surface is slightly stained and scratched. BroilKing advise the instructions from the surface, but nothing against using a mild detergent, so that the surface remains lackluster and a little 'ugly, but quite usable.
